SHAPING A GREEN FUTURE: SUSTAINABILITY INITIATIVES OF SPEIDEL`S BRAUMANUFAKTUR

We, the Speidel family, have been running our family-owned house since 1763. We want to use our strengths for many generations to come: maintaining the tradition of warm hospitality, changing and growing with the demands of the times, here in this place, in the wonderful landscape of the Swabian Alb, which we love with all our hearts.


The natural changes of time have left their mark on our establishment: the brewery inn was completely renovated in 1970 and guest rooms were added, including a swimming pool heated by brewery cooling water. In 1978 the brewery had to cease operations. The focus of our activities was then on the inn, which developed into a popular restaurant.


When the renewal of the brewing tradition was discussed in 1990, it quickly became clear that the empty brewery buildings should be brought back to life. They characterize the town of Ödenwaldstetten and give it a unique silhouette that is visible from afar here on the Alb, and preserving this silhouette was and is a major concern for us, because for us, preserving the visible structure is just as much a part of protecting our homeland as preserving the landscape.


The hotel extension was built in 2005. The design of the building and the materials of the exterior facade are taken from the basic elements of rural Swabian architecture and are reminiscent of the farms that once stood on this site. In 2008, new conference rooms were set up in the disused rooms, which have not lost their original brewing-industrial character despite the change of use.


Generation after generation, we enable our guests to feel at home, spend enjoyable days or hours in our house and learn to appreciate the beauty of the area. As "Taste the South of Baden-Württemberg" hosts, we have been using regional products in our kitchen for over 10 years with great success. In addition to the short procurement routes, the benefit lies in supporting producers in the region. From the Alb for the Alb. Whether Hohensteiner cheese, Alb buffalo, Meidelstetter lentils or Ehestetter mushrooms, each of these products serves to preserve the region from which we benefit so much.


We know that our environment is our greatest potential. Therefore, it is our aim to further raise awareness of active environmental protection and careful, responsible use of resources in setting the course for future generations. By implementing the GreenSign environmental management system, we are pursuing a continuous improvement of environmental protection measures and a consistent implementation of all goals and projects.


In our brewery we work strictly according to the German Purity Law, which allows us to use only a few, selected and natural raw materials for the production of the product "beer". Symbolically, we want to transfer this purity law to all parts of our company and give it the following content:


We place particular emphasis on the long-term saving of energy and water, as well as on reducing waste and emissions. We also avoid environmentally harmful substances, which are contained in many cleaning and washing products, for example. We also try to raise awareness among our guests and employees about environmental protection.

Commitment to nature conservation: As a biosphere reserve partner, we are committed to preserving the natural and cultural landscape worthy of protection in various ways:

Our food producers obtain most of their raw materials from the biosphere reserve and the districts involved in the biosphere reserve. The raw material suppliers must adhere to the biosphere reserve's special production criteria. These include, for example, a fixed percentage of extensive areas or the avoidance of genetic engineering and grain stalk shorteners.

We restaurateurs mainly process these regionally produced products and thus promote the sale of these products.

Information centers, educational partners and nature and landscape guides explain the connections between the management of cultural landscapes and ecology.

In addition, the biosphere reserve partners collect donations for nature conservation projects.

Our employees are the heart of the hotel and bring it to life. They welcome our guests and make them feel welcome. They carry out their tasks with joy and are guided by high quality and service standards. The collaboration is characterized by respect and appreciation for one another. This enables our team to deliver top performance at all times. Speidel's BrauManufaktur encourages its employees to see meaning in their work. We are committed to permanently monitoring and improving our environmental protection performance in annual internal audits. If necessary, the environmental policy is adapted to current circumstances. In addition, we are committed to complying with all applicable legal provisions, relevant environmental laws and corresponding regulations.
